What sounds better than a warm butter chicken pie on a cosy weekend in!? Try these easy but delicious hand pies at home.
Ingredients
- 20 g butter
- 1 onion, finely chopped
- 250 g minced chicken
- 1 carrot, grated
- 2 tbsp butter chicken curry paste
- 30 ml frozen peas
- 2 sheets puff pastry
- 1 egg, beaten lightly
Instructions
REHEAT the oven to 220ºC. Line a baking tray with baking paper.
MELT butter in a frying pan over medium-high heat. Cook onion, stirring, for 3 minutes or until soft. Add chicken and cook until browned. Add carrot, curry paste and peas, cooking for 5 minutes until thickened. Season to taste.
CUT each pastry sheet into quarters (you will have eight squares). Place four pastry squares on trays and divide chicken filling evenly into the centre of pastry squares. Brush edges with egg.
GENTLY fold remaining pastry squares in half; using kitchen scissors, cut three slits in the centre of the folded side.
OPEN pastry squares out; place over chicken filling. Press pastry edges together with a fork to seal. Brush top of pies with egg.
BAKE pies for 25 minutes or until browned.
TIP: As a serving suggestion, combine 1⁄2 cup Greek-style yoghurt with 2 tablespoons finely chopped mint in a bowl. Serve with hand pies.
