No need to laboriously roll out dough and cut out cookies, these slice-and-bake biscuits save on time and effort. Pick from 4 scrumptious flavour options to make a cookie for every craving!
Ingredients
- 250 g Butter
- 1 ¼ cups, plus 1 tbsp extra, Icing sugar
- 2 tsp Vanilla essence
- 2 cups Flour
- ½ cup Rice flour
- ⅓ cup Cornflour
- 2 tbsp Milk
Instructions
BEAT butter, sugar and vanilla together in a bowl until pale and fluffy. Stir in combined sifted flours, in two batches, then milk until mixed well. Divide mix in half. Knead each half on a floured surface until smooth. Roll halves into 25cm logs and wrap in baking paper; refrigerate for 1 hour until firm.
PREHEAT the oven to 160°C. Grease two oven trays.
CUT biscuit dough logs into 1cm-thick slices. Place biscuits 3cm apart on the prepared oven trays.
BAKE biscuits for 20 minutes or until pale golden, turning trays halfway through baking. Stand biscuits on trays for 20 minutes before transferring to wire racks to cool. Dust with extra icing sugar before serving.
Tip: The biscuit dough can be refrigerated for up to 2 days or frozen, wrapped in foil, for up to 1 month.
FLAVOUR VARIATIONS
PECAN & CINNAMON
Make Slice-And-Bake Biscuits, adding 1 teaspoon ground cinnamon to the sifted flours and stirring in 1 cup roasted chopped pecans. Before baking, sprinkle sliced biscuits with 2 tablespoons cinnamon sugar. Continue as directed in the recipe.
LEMON & PISTACHIO
Make Slice-And-Bake Biscuits, beating 1 tablespoon finely grated lemon rind with butter and icing sugar instead of vanilla. Stir in ¾ cup roasted chopped pistachios with the combined sifted flours. Continue as directed in the recipe.
M&M’S
Make Slice-And-Bake Biscuits, adding in 230g mini M&M’s or other candy-coated chocolates, with the combined sifted flours, in batches. Continue as directed in the recipe. Note: the colour from the M&M’s may bleed a little into the dough.
ORANGE & POPPY SEED
Make Slice-And-Bake Biscuits, beating in 1 tablespoon finely grated orange rind with the butter and icing sugar instead of vanilla. Add 1½ tablespoons of poppy seeds with combined sifted flours. Continue as directed in the recipe.
