The food
Chef Yoshan Naidu, who has been at the helm of the Quills Kitchen for over two years, has the ability to create exquisite African cuisine. But apart from cooking hearty local meals, he draws inspiration from other countries. For his new and extensive summer menu, he chose to mix local tastes with Asian fusion to create interesting flavours.
“We’ve created wholesome food, featuring local product and a fresh and simple approach to our dishes. This appeals to our guests who tend to be either having their last meal before leaving South Africa, or enjoying their first as they enter. They want a touch of local taste, but they don’t want to be overwhelmed,” explains Yoshan.
The new 2019/2020 summer menu includes a refreshing amuse-bouche of tomato, asparagus and pickled quail egg salad; pea infused risotto accompanied by pickled green tomatoes, topped with a mint gremolata and goats’ cheese, as well as grilled honey and garlic salmon on a wilted bok choy and lemon grass cream. Yoshan and his team also created a new roasted and spiced Mediterranean vegetable and couscous salad.
We recommend the Duo of Duck. Pan fried ginger and chilli infused duck, baby carrots, accompanied by a pulled duck croquette with a beetroot and orange puree, finished with thyme jus. Or if you’re feeling adventurous, try the crocodile carpaccio with pickled Peppadew salsa, micro salad and a tomato chilli jam.

Décor & ambience
Quills is an elegant restaurant with a sophisticated atmosphere. The ambience is relaxed and quiet, making it the perfect spot to wind down when entering the country. If you have a long flight to Europe ahead of you, Quills is the perfect place to practice mindfulness before your trip.
InterContinental Johannesburg O.R. Tambo Airport forms part of the five star rated Tsogo Sun hotel group (which turned 50 last year!) and as such prices at Quills are expensive, but worth it. Expect to pay around R290 for salmon or sea bass, and R210 for roast chicken.
