Baking tips from Shirley Guy:
• Before you start, prepare your pots and pans, and preheat the oven to the correct temperature.
It helps to be organised and have all your equipment ready to go. While you’re making the mixture, let the oven do its thing so you don’t lose time waiting for it to pre-heat – some batters change consistency if they’re left standing for too long.
• Get your ingredients ready, and spread them out on the counter in front of you.
That way, you know you’re not missing anything, so you won’t have to do a mad dash to the shops, or turn the pantry upside down in a last-minute search for those vanilla pods.

• Be meticulous and measure everything accurately.
There isn’t much room for error when you’re baking, because getting one amount wrong can set off the whole recipe. It’s better to be safe than sorry, so take your time making sure you get your measurements right.
