Ingredients
- 150g Plain Flour
- 1/2 tsp. Baking Powder
- 1/2 tsp. Bicarbonate of Soda
- 40g Walnuts, roughly chopped (can be omitted)
- 70g Melted Butter
- 120g Castor Sugar
- 1 Egg
- 40g Plain Yoghurt
- 1 tsp. Vanilla Extract
- 1 Ripe Banana (mashed)
- 100g Dark Chocolate
- A pinch of Sea Salt
- 20g Banana Chips
- 120g Butter
For the caramel
- 120g Butter
- 150g Brown Sugar
- 397g Condensed Milk
Directions

- Preheat oven to 190°C (170°C Fan). Grease and line a loaf tin.
- In a large bowl, add the flour, baking powder, bicarbonate of soda and walnuts. Stir to combine and set aside.
- In another large bowl, add the butter, caster sugar, egg, yoghurt and mashed banana. Stir until combined and add into the dry ingredients.
- Pour into the loaf tin and bake for 25-30 minutes or until a skewer comes out clean when inserted.
- To make the caramel, place a sauce pan over a medium heat, add the butter, light brown sugar and stir to combine. Once the sugar has melted, simmer to 4-5 minutes then add the condensed milk. Stir to combine and bring to a boil.
- Leave to simmer away for 5 minutes or until slightly thickened.
- Top the loaf with the caramel, making sure to spread over into an even layer and leave to cool.
- In a large bowl, add the milk chocolate, dark chocolate and butter. Microwave in increments of 30 seconds until melted and glossy. Leave to cool for 5 minutes.
- Pour the chocolate over the caramel and spread evenly. Finish with a sprinkle of sea salt and banana chips. Refrigerate until the chocolate has set and serve.
