Ingredients
- 2 parsnips (700 g), chopped
- 2 potatoes (400 g), chopped
- 60 g butter
- ¼ cup warm milk
- 2 tbsp olive oil
- 8 thick pork sausages
- 200 g rocket leaves
Sage and onion gravy
- 2 tbsp olive oil
- 1 garlic clove, crushed
- ½ cup caramelised onions
- 1 tbsp flour
- 1 cup chicken stock
- 8 fresh sage leaves, torn
- 80 ml apple cider
Method
Steam or microwave parsnip and potato until tender; drain. Mash parsnip and potato with butter and warm milk in a large bowl until smooth. Season to taste and cover to keep warm.
Heat oil in a frying pan over medium heat. Cook sausages, turning, for about 10 minutes or until cooked through.
Meanwhile, you can start making sage and onion gravy.
Drizzle sausages with sage and onion gravy; serve with parsnip mash and rocket. Heat oil in a medium saucepan over medium-high heat; cook garlic and caramelized onion, for 1 minute or until fragrant. Add flour; cook, stirring, for 1 minute. Gradually add stock, then sage leaves and cider; simmer, uncovered, for about 10 minutes or until gravy is thickened slightly. Season to taste.
