Comfort food evokes images of scrumptious pasta and your mom’s soup. Or, in my case, a delicious slice of my grandmother’s beef pie. But, when it comes to those go-to comfort meals in the middle of a heatwave? Count me out! Luckily, you can try these comfort foods for hot weather.
These meals are easy, delicious, and best of all, won’t make feel any hotter than you already do!

Gazpacho
This chilled Spanish soup is the perfect way to cool down on a hot day. Made with fresh tomatoes, cucumbers, peppers, and garlic, gazpacho is packed with flavour and nutrients. It’s also incredibly versatile – you can serve it as a starter, light lunch, or refreshing evening meal.

These are incredibly versatile and are incredibly easy to whip up. Try a combination of rice noodles, shredded chicken or vegetables, a light peanut dressing, and a sprinkle of fresh herbs for a burst of flavour

A favourite comfort meal in my house is the tuna pasta salad. All you need is a few tins of tuna, some shell or screw pasta and some mayo. It takes less than 15 minutes and you’ve got an easy and delicious meal on your hands.
Throw in some veggies, and swap the pasta for rice, and you’ve got a healthier alternative.
Coconut curry chickpea bowls
For a vegetarian twist, this dish is bursting with flavour and protein. Chickpeas are simmered in a fragrant coconut curry sauce and served over rice with a variety of colourful chopped vegetables.
