Ingredients
- Poppy seed grissini
- 250ml whole wheat flour
- 360ml warm water
- 10ml white sugar
- 14g dry yeast
- 750ml cake flour
- 15ml salt
- 100g poppy seeds
- Pizza scrolls
- 610g white bread flour12g dry yeast

- 5ml salt
- 30ml olive oil
- 400ml warm water
- Pizza sauce
- 1 whole baby onion, grated
- 2 cloves garlic, crushed
- 30ml olive oil
- 200g cherry tomatoes, quartered
- 150g tomato puree
- 15g tomato paste
- 5ml sugar
- 10g fresh basil, finely chopped
- 60ml red wine
- 125g mozzarella, grated
- 50g cheddar, grated
- Salt & pepper to taste
Instructions
Dough
- Combine the whole wheat flour, water, sugar & yeast and leave for 10minutes
- Add the remaining ingredients except for the poppy seeds & mix on low until combined. Mix on medium for 5-7 minutes until smooth & shiny
- Place in oiled bowl, wrap with cling wrap and prove for an hour or until double in size
- Knock dough down & roll into a rough rectangle
- Cut 1cm strips & roll in the poppy seeds
- Plait in the oval frame shape in a lined baking sheet
- Leave for 15minutes for the dough to puff slightly, while preheating oven to 220°C
- Bake for 20-30minutes
Pizza scrolls
- Sift the flour & stir the yeast through
- Mix together the salt, oil & water
- Stir into the flour to make a soft dough then turn out onto a light floured surface
- Knead for 10minutes until smooth
- Place in an oiled bowl, cover with cling wrap & prove for an hour or until double in size
- Knead the dough lightly & roll into a rectangle
- Spread the tomato sauce, leaving a 2cm border
- Sprinkle the chesses evenly over the sauce
- Roll the dough up tightly & cut 2cm wide slices
- Arrange on a lined baking tray
- Leave for 30minutes until dough has puffed, while preheating the oven to 220°C
- Bake for 10-20minutes until risen and golden
Pizza sauce
- Sauté the garlic & onion in olive oil
- Add cherry tomatoes & cook on high for 5minutes
- Pour in the puree & paste & stir
- Add the rest of the ingredients & cook for another 5-10minutes, stirring occasionally. Allow to cool
- Arrange the scrolls inside the frame in a presentation board
