Ingredients
- For The Cake:
- 8 eggs
- 450g caster sugar
- 500ml vegetable oil
- 450g self-raising flour
- 15g bicarbonate of soda
- 7g cinnamon powder
- 7g ginger
- 7g cloves
- 250g carrots, grated
- For The Cream Cheese Icing:
- 1kg icing sugar, sifted
- 500g butter
- 250g cream cheese
- 160g cashew nuts/ pecans
Instructions
To make the cake
- Place the eggs and sugar in a mixing bowl and cream together.
- Then, add the oil and combine.
- Gradually add the flour and spices while mixing.
- Lastly, add the carrots.
- Divide the mixture between 2 cakes tins.
- Bake in a pre-heated oven at 180 °C for 50 minutes.
To make the icing
- Place the icing sugar and butter in a mixing bowl and combine.
- Add the cream cheese and combine.
Garnish
- Sprinkle the nuts on top.
