Ingredients
- Hendrick's mojito
- 150ml Hendrick's Gin
- 2 sliced limes, the juice of another
- 4 sprigs mint
- 3-4tbsp soft brown sugar
- ½ cucumber sliced lengthways
- handfuls crushed ice
- soda water
- Pomegranate bellini
- 2.5cm of pomegranate juice
- 1cm crème de cassis
- 1tsp fresh pomegranate seeds
- Prosecco
- Italian Champagne Cocktail
- brown sugar cube
- 2 drops of Angostura bitters
- 1cm of Amaretto
- Prosecco
Instructions
Hendrick's mojito
A twist on the Cuban classic. In a jug, add 150ml Hendrick's Gin to 2 sliced limes, the juice of another third, 4 sprigs mint and 3-4tbsp soft brown sugar, and stir. Add ½ cucumber sliced lengthways, and 2 handfuls crushed ice then top up with soda water. Stir, check the sweetness and serve in highball glasses with swizzle sticks made from long slices of cucumber.
Pomegranate bellini
Pour 2.5cm of pomegranate juice into a Champagne flute and top with 1cm crème de cassis and 1tsp fresh pomegranate seeds. Top with Prosecco and serve.
Italian Champagne Cocktail
A sweeter version of the classic Champagne cocktail. Place a brown sugar cube in a flute and sprinkle 2 drops of Angostura bitters on to it. Leave for 2 minutes, then add 1cm of Amaretto and top with Prosecco. Serve immediately, before the sugar cube melts.
