Looking for an easy, impressive dessert that you can whip up in under an hour? We got you. These delicious steamed citrus sponges are light and airy, and wow you with their bursts of orange flavour. Plus – all you need is a handful of store-cupboard ingredients.
Ingredients
- 120g butter, softened, plus extra for greasing
- 120g caster sugar
- 2 medium free-range eggs
- 120g self-raising flour
- 4tbsp dried breadcrumbs
- Zest 1 orange, plus 4 orange slices for
- the bottom of the moulds
- 2½tbsp golden syrup
- 2tbsp pistachios, chopped
- Cream, to serve
Instructions
- Heat the oven to 160C Fan/ Gas 4. In a medium bowl, beat the butter, sugar, eggs and flour with an electric mixer until just combined. Stir in the breadcrumbs and orange zest.
- Divide the golden syrup between each pudding mould, then add a slice or orange. Divide the sponge mixture evenly between the moulds. Cover each with a piece of buttered foil.
- Put the moulds in a roasting tin or baking dish and fill halfway up the sides with just-boiled water from the kettle. Bake for 25-30 mins until well risen.
- Turn out onto a plate, top with the pistachios and serve with cream.
TIP If you have plastic moulds, microwave the puddings for 5 mins, covered with a plastic lid or cling film
