Gooey chocolate and sticky caramel, yes please – this is completely addictive!

Warm caramel brownie

Serves: 6-8 Prep Time: 10 minutes Cooking Time: 10 minutes 10 minutes

Ingredients

150g unsalted butter, plus extra
for greasing
250g soft brown sugar
300g dark chocolate, broken
3 medium free-range eggs
1tsp vanilla extract
70g plain flour
3tbsp salted caramel, plus extra to
serve
Crème fraiche or ice cream, to serve
You will need:
20cm square baking tin, greased

Instructions

Heat the oven to 160C Fan/Gas 4. Melt the butter, sugar and dark chocolate in a pan over a low heat, stirring once or twice to combine, then set aside to cool for 10 mins.
Whisk in the eggs one at a time, until fully incorporated and the mixture looks glossy, then add the vanilla extract and fold in the flour. Pour into the greased tin, then add dollops of salted caramel. Use the end of a spoon or skewer to swirl it through the chocolate mixture.
Bake for 25 mins – you want the top to be just set and cracking, and the middle to be gooey.
Serve with crème fraiche or ice cream and extra salted caramel, as you like.
