Serve these tacos for a quick throw-together meal. The spice mix is a great cheat to get a lovely level of spice without the hassle.

Ingredients
- 1 small pineapple, approx 400 g, chopped
- 1 tbsp Mexican spice fajita and taco mix
- Small bunch coriander leaves, roughly chopped, plus extra leaves to serve
- 250 g block halloumi, sliced into fingers
- 8 small soft flour tortillas
- Zest and juice 1 lime, plus lime wedges to serve
- 2 tbsp olive oil, plus extra to serve
- Tzatziki, aioli or soured cream (optional)
Instructions
1. TOSS together the pineapple, spice mix, chopped coriander, and lime zest and juice in a medium bowl. Add 1 tbsp olive oil, and season with salt and pepper, then toss again. Leave in the fridge to chill.
2 HEAT a griddle or frying pan on a high heat. Once hot, fry the halloumi slices on each side until charred. Brush with the remaining oil and leave to one side.
3. WARM the wraps, then serve with the halloumi, chilled pineapple salsa, extra coriander leaves and lime wedges for squeezing, if you like. Serve with tzatziki or other sauce if preferred.
