- 225g self-raising flour
- 1tsp baking powder
- 50g Parmesan, finely grated
- 2tbsp snipped chives
- 1tsp mustard powder
- 130ml skimmed milk, plus a little extra to glaze

Instructions
- Heat the oven to 180C. Rub the butter into the flour and baking powder. Stir in the Parmesan, chives, mustard and a good pinch of sea salt. Add the milk and mix. Don’t overwork it or you’ll have heavy scones.
- Gently roll out on a floured surface and cut out star shapes. Don’t re-roll more than once or they will be tough. Put onto a greased baking tray, brush over a little milk then sprinkle on the Cheddar and bake for 10-12 minutes or until risen and lightly browned.
