A sharp, refreshing twist on a strawberry ice cream recipe. Balsamic vinegar seems like an unusual ingredient, but the flavours work together perfectly.

Ingredients
- 450g strawberries, hulled
- 150g castor sugar
- 1tbsp balsamic vinegar
- 150ml double-thick cream
Instructions
- Whizz the strawberries and sugar in a blender to form a purée, then stir in the balsamic vinegar and chill for 30 minutes.
- Stir in the cream then churn in an ice cream maker until nearly frozen, before freezing overnight. Remove from the freezer 10 minutes before serving.
