Indulge in these luxurious, guilt-free berry & coconut chia puddings, the tastiest healthy dessert around!
Ingredients
- 2½ cups coconut milk
- ⅓ cup white chia seeds
- 1 tsp vanilla extract
- 2 tbsp honey or pure maple syrup
- 1 banana, chopped coarsely
- 1 tbsp finely grated orange rind
- 300 g mixed berries
Instructions
PLACE coconut milk, chia seeds, extract and honey in a large bowl. Cover; refrigerate for 1 hour or overnight until thick.
BLEND or process coconut milk mixture with banana, rind and 2 cups of the mixed berries.
SPOON mixture into six ¾-cup serving glasses.
COVER; refrigerate 30 minutes or until pudding has thickened. Serve topped with remaining berries.
TEAM TIP: You could add some pitted cherries to the berry mix, if you like; use whatever combination of berries you like. If you have one, you can use a Thermomix or Vitamix to achieve a very smooth pudding consistency. Puddings can be made a day ahead; store, covered, in the fridge. Top with extra berries just before serving.
