INGREDIENTS
- 4 sweet potatoes
- 3 tbsp olive oil
- 200 g kale, chopped
- 1 clove garlic
- 60 g almonds
- Hummus, to serve
METHOD
1. Preheat oven to 200°C.
2. Coat potatoes in 1 tbsp oil and season with salt. Wrap each potato in foil and bake on a tray for 1 hour 10 minutes.
3. Place kale on a tray, toss with garlic, 1 tbsp oil, and salt. Bake for 10 minutes until crispy. Add almonds and bake for 3 minutes until toasted.
4. Cut into the middle of each potato to open it up slightly, spoon kale onto each potato, and top with toasted almonds.
