These banana pancakes smothered in glossy Bar-One sauce will give you the best of both worlds. We added peanuts to the sauce for extra crunch, but feel free to leave them out if preferred. This Bar-One sauce is so good that we’d recommend keeping a jar of it in your fridge so you always have on hand. Enjoy it spooned over ice cream, glazed on cakes or swirled into milkshakes.
Ingredients
- PANCAKES
- 150 grams self-raising flour, sifted
- 2 tbsp castor sugar
- 1 1/4 cups buttermilk
- 1 egg, lightly beaten
- 2 tsp maple-flavoured syrup
- 20 grams butter, melted
- 1 banana, very thinly sliced
- PEANUT BAR-ONE SAUCE
- 1/2 cup cream
- 180 grams Bar-One, chopped
- 2 tbsp salted peanuts
- TO SERVE
- 4 scoops chocolate ice cream
Instructions
PANCAKES
COMBINE the flour and sugar in a large bowl. In a separate bowl, whisk together the buttermilk, egg, syrup and butter. Add to the dry ingredients and whisk to form a smooth batter. Stir through the banana slices
HEAT a little oil in a pan over medium heat. Pour 1/4 cup pancake batter into the pan and swirl to spread thinly over the surface. Cook for 1-2 minutes until lightly golden, then flip and cook for another 1-2 minutes.
REPEAT with the remaining batter to make a total of 8 pancakes. Place cooked pancakes on a plate and cover to keep warm.
PEANUT BAR-ONE SAUCE
HEAT cream, Bar-One pieces and peanuts in a pot over medium heat, stirring often, until melted and smooth.
TO SERVE
STACK pancakes onto serving plates and top each with a scoop of ice cream. Drizzle over a generous spoonful of Bar-One sauce and enjoy while still warm.
Tip from the team: For an adult version of this pudding, add a splash of Bailey’s or Amarula to the sauce once it has melted together.
