Not much to say about this other than it’s chicken cooked in butter. What more do you need? It’s absolutely delicious!
Ingredients
- 10 bone-in, skin-on chicken thighs
- Brine made from 50g salt dissolved
- in 500 ml water
- 1 tsp chilli powder, or more or less
- to taste
- 1 tbsp paprika
- 1 tsp ground cumin
- 250g butter, melted
- 6 garlic cloves, peeled and squashed
- 2 bay leaves
- 1 tbsp honey
- 2 tbsp piri piri sauce (or use BBQ
- sauce)
- You will also need:
- A lidded BBQ; a skillet
Instructions
1 Submerge the chicken in the brine
and leave for 1-4 hrs, then remove and
pat dry.2 Rub the spices all over the chicken,
then put in a skillet with the melted
butter, garlic and bay leaves, making
sure the ingredients come no more than
halfway up the pan. Place on the BBQ
grill, close the lid and cook for 1 hr (your
BBQ should be between 120-140°C).
3 Remove the chicken from the butter
and coat it in the honey and piri piri
sauce, then cook on the BBQ grill for
20-45 mins until deeply coloured, turning
a few times; the internal temperature
should be 75°C. Place back in the skillet
and rest for 10 mins before serving.
