Ingredients
- 200 g dark chocolate (70% cocoa), coarsely chopped
- 30 g butter, softened
- 3 eggs, separated
- 300 ml cream
- 1½ tbsp cocoa
- 12 pieces biscotti
Instructions
MELT chocolate in a medium heatproof bowl over a medium saucepan of simmering water (don’t let the water touch the base of the bowl).
REMOVE the bowl from heat; stir in butter until smooth. Fold in egg yolks. Transfer mixture to a large bowl.
BEAT cream in a small bowl with an electric mixer until soft peaks form.
BEAT egg whites in another small bowl with an electric mixer until soft peaks form.
FOLD cream into chocolate mixture, then fold in egg whites, in two batches. Spoon mixture into six 1¼-cup (310 ml) cups or glasses.
REFRIGERATE for 3 hours or overnight.
BEFORE serving, dust with cocoa; serve with biscotti.
TEAM TIP: Make sure you use chocolate with 70% cocoa solids to get the best results.
