Ingredients
- RICOTTA CHEESECAKE LAYER
- 250 grams cream cheese, softened
- 400 grams ricotta
- ⅔ cup caster sugar
- 3 eggs
- 2 tbsp orange-flavoured liqueur
- 100 grams glace clementines or orange, chopped coarsely
- 2 tbsp finely chopped glace citron
- CAKE LAYER
- 180 grams dark semi-sweet chocolate,coarsely chopped
- 180 grams unsalted butter, softened
- 1 ⅓ cups caster sugar
- 3 eggs
- 1 cup ground almonds
- ½ cup flour
- ¼ cup cocoa
- 400 grams glace clementines, halved or quartered
- DARK CHOCOLATE GANACHE
- ½ cup pouring cream
- 180 grams dark semi-sweet chocolate, chopped coarsely
Instructions
RICOTTA CHEESECAKE LAYER
BEAT cream cheese in a bowl using an electric mixer until smooth. Add ricotta and sugar and beat for 2 minutes or until smooth. Add eggs and liqueur, beating until just combined. Stir in glace fruit. Set aside until needed.
CAKE LAYER
PREHEAT the oven to 160ºC. Grease a 25cm springform pan and line the sides with baking paper.
STIR chocolate in a heatproof bowl over a simmering pot of water ( not letting the bowl touch the water) until smooth. Cool for 10 minutes.
BEAT butter and sugar together in a bowl with an electric mixer for 5 minutes or until pale and fluffy. Beat in eggs, one at a time, until just combined. Stir in ground almonds, sifted flour and cocoa, and melted chocolate.
SPREAD chocolate mixture into pan. Pour ricotta cheesecake layer over chocolate layer.
BAKE for 1 hour 5 minutes or until slightly wobbly in the centre. Cool in the oven with the door ajar.
DARK CHOCOLATE GANACHE
BRING cream almost to the boil in a pot. Remove from heat. Add chocolate and stir until smooth. Stand for 15 minutes or until ganache is spreadable.
ASSEMBLE
PLACE cheesecake on a plate or cake stand. Spread ganache on top of cake and decorate with clementines. Stand until set or refrigerated for 30 minutes.
FOOD TEAM TIP : You can use other glace fruit if you’d prefer. The cheesecake will have a softer middle if served on the same day it’s made. Feel free to make it the day before and store in the fridge until ready to serve.
