Craving a chocolate? Try this delicious almond slice truffle to satisfy your sweet tooth craving.
TOTAL TIME 1 hour 10 minutes + refrigeration | SERVES 6-8
INGREDIENTS
- 150 g dark semi-sweet chocolate, chopped
- 3 egg whites
- ¾ cup caster sugar
- 1 cup ground almonds
- 2 tbsp flour
- 1 tbsp cocoa powder
Topping
- 200 g dark semi-sweet chocolate, chopped
- 125 g butter, chopped
- ⅓ cup caster sugar
- 3 egg yolks
METHOD
PREHEAT oven to 180ºC. Grease a 20cm x 30cm rectangular slice pan; line base and two long sides with baking paper, extending the paper 5cm over the sides.
PLACE chocolate in a heatproof bowl over a pot of simmering water (make sure the base of the bowl doesn’t touch the water); stir until melted. Spread chocolate over base of pan. Refrigerate for 10 minutes or until set.
BEAT egg whites in a bowl with an electric mixer until soft peaks form; gradually add sugar, beating until dissolved between additions. Fold in almond meal and flour. Spread mixture over chocolate base.
BAKE for 20 minutes or until firm. Cool for 5 minutes.
MEANWHILE, make the topping. Place chocolate in a heatproof bowl over a pot of simmering water until melted. Beat butter, sugar and egg yolks together in a bowl with an electric mixer until sugar dissolves. Add melted chocolate and stir until smooth.
POUR the topping mixture over the biscuit mixture and bake for a further 15 minutes or until set. Remove and allow to cool.
REFRIGERATE until firm. Before serving, dust with cocoa; cut into triangles.
