Coffee buns recipe:
INGREDIENTS
For the chocolate buns
- 1 cup flour
- 1 cup brown sugar
- 1 tbsp baking powder
- 1⁄2 tsp cinnamon
- Pinch nutmeg
- 1⁄2 cup cocoa
- 1⁄2 cup warm black coffee
- 1⁄2 cup oil
- 200 g dark chocolate, melted
- 5 eggs, separated
For the sweet cream
- 1 cup cream
- 1 tbsp honey
- 1⁄4 tsp ground cloves
- 1⁄4 tsp ground nutmeg
- 1⁄4 tsp ground cardamom
For the coffee ganache
- 250 g dark chocolate, finely chopped
- 1/2 cup cream
- Pinch salt
- 2 tbsp instant coffee
METHOD
For the chocolate buns
1. Preheat the oven to 180°C. Grease 10 round 8 cm moulds and set aside.
2. Mix all the dry ingredients together.
3. Whisk coffee, oil, melted chocolate and egg yolks until smooth. Pour into the dry ingredients and mix until combined.
4. Whip egg whites to soft-peak stage and fold them into the chocolate.
5. Divide the mixture into moulds and bake for 30 minutes.
For the sweet cream
1. Whip the cream until fluffy then gently fold in the honey and spices.
For the coffee ganache
1. Place chocolate in a bowl. Heat the cream, salt and coffee until tiny bubbles appear around the edge, then pour this over the chocolate and allow it to sit for 1 minute. Mix until smooth.
2. To serve, dollop spiced cream on to the buns and pour over ganache.
