INGREDIENTS
* ¼ cup olive oil
* 3 tbsp mustard
* Salt and pepper
* 1.8 kg chicken
METHOD
1. Preheat the oven to 200°C and grease a baking tray.
2. Mix the oil, mustard, salt and pepper. Rub chicken with this mixture, then place on the tray and roast for 30 minutes.
3. Reduce oven temperature to 180°C. Roast for another 30 minutes, until the chicken skin is crispy.
