INGREDIENTS
- 30 g butter
- 85 g dark-brown sugar
- 150 ml double cream
- 1⁄4 tsp salt
- 2–4 Golden Delicious apples (500 g),
- peeled, cored and diced
- 1 roll puff pastry
- 1 egg, beaten
- 1 tbsp brown sugar
METHOD
1. Preheat oven to 200°C.
2. Melt butter, sugar, cream and salt in an oven-safe pot. Once sugar has dissolved, bring to a boil. Cook for 3 minutes until golden and thick. Remove from the heat. Add the apples and stir.
3. Use the lid of your pot as a measure and cut out a circle of puff pastry, then brush one side with the egg. Place the pastry on to the apples (in the pot) with the egg-washed side up. Tuck the edges around the apples and sprinkle with 1 tbsp brown sugar.
4. Bake for 25–30 minutes, until the pastry is crisp and golden. Serve immediately.
