Try this Sticky black rice with lime and mint coated nectarines by Justine Drake for Juicy Delicious!
INGREDIENTS
For your rice:
- 1 cup (250 ml) black rice
- 2 cups (500 ml) water
- ⅓ cup (80 g) brown sugar
- ½ cup (125 ml) coconut milk
Fruit:
- 3 nectarines, de-pipped and cut into thin wedges
- Juice of 1–2 limes
- 1 handful mint, leaves removed
- 2 Tbsp castor sugar
METHOD
Soak rice in cold water for an hour. Rinse well.
- Place in a pot with water, stir, bring to the boil, reduce heat, cover and simmer for about 35 minutes.
- Stir in sugar and coconut milk, add a pinch of salt and simmer for about 10 minutes.
- Allow to cool.
- Meanwhile bash the mint leaves and sugar together until sugar is bright green.
- Just before serving, drizzle fruit with lime juice then toss to coat in mint sugar.
- Spoon fruit over cooled black rice and serve.
